Vegetables and Beef

From Dorothy McNett's recipes at Go to your local Farmer's Market and pick out a few vegetables. Combine with local grass fed beef and make a meal!

2 tablespoons olive oil, or grapeseed oil
3/4 - 1 pound beef chuck or round steak, thinly sliced (or use ground beef)
1/2 teaspoon sea salt
freshly ground pepper
1 - 2 teaspoons snipped fresh herbs, such as rosemary, basil, oregano...
1 medium onion, slivered
3 - 4 cloves garlic, slivered
3 - 4 carrots, sliced
1 - 2 ribs of celery, sliced
4 - 5 stalks asparagus, sliced
1/2 cup barbeque sauce or catsup, or salsa, etc.
lots of greens for serving

Slice the meat thinly and toss with the salt, pepper, and herbs. In heavy bottomed skillet or stir-fry pan heat the oil and then add the seasoned beef slices. Cook and stir about 3 - 4 minutes or so, and then toss in the vegetables. Cook and stir about 5 - 6 minutes, adding the sauce or catsup or salsa. Arrange the greens on serving platter or plates, and then pile on the wonderful beef and veggies. Nice served with biscuits or other breads.
