Pan Roasted Almonds

From Dorothy McNett's recipes at A great appetizer or anytime snack.

2 cups raw unsalted almonds
1 tablespoon extra virgin olive oil
1/2 teaspoonsea salt
1 teaspoon cumin powder
1/2 teaspoon coriander powder

Stir all ingredients together in a bowl. Heat a heavy bottomed saute pan over high heat about 30 seconds, and then add the seasoned almond mixture. Reduce heat to medium and cook and stir about 3 - 4 minutes, or until almonds get toasted a bit. Cool and serve!
