Roasted Avocado Spread

From Dorothy McNett's recipes at www.dorothymcnett.com. A little different take on avocado spread!

1 - 2 firm ripe avocados
1 small onion
1 lime or lemon
1 tablespoon grapeseed oil, or olive oil
1/2 teaspoon herbs d Provence
1 red ripe tomato
bread slices or chips, for dipping or spreading

Wash and dry the vegetables. Cut the avocado in half and remove the pit. Cut the onion into 1/2 inch slices. Cut the lime or lemon in half and remove the seeds. Drizzle the cut sides with the oil and sprinkle with the herbs. Heat a ribbed grill pan or a flat griddle over high heat to get it nice and hot, and then reduce heat to medium high. Place the avocado, onion and lemon pieces cut side down and cook several minutes, removing them as they get slightly charred on the cut side. Let cool a bit and then scoop out the avocado pulp into a bowl, dicing the onion slices and the lime or lemon halves. Dice the tomato and add to the mix, blending to make a dip or a spread, adding salt and pepper if needed. Serve with chips of bread slices, etc.
