Gouda Good Cookies

Fromm Dorothy McNett's recipes at www.dorothymcnett.com. Cookies for an appetizer! Yummy!

1 3/4 cups grated Gouda cheese
1 cup unbleached all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon freshly grated pepper
1/8 teaspoon nutmeg
1/4 cup unsalted butter, room temperature
endive leaves, fresh grapes, other cheeses, etc. for serving

Preheat oven to 400 degrees. Use a food processor with steel chopping blade in place, or mix carefully by hand. Place grated cheese, flour, baking powder, pepper and nutmeg in the bowl and process to blend. Add the butter and process just to make a nice dough. On a lightlhy floured surface roll the dough out and cut with cookie cutters or with a knife. Place on a silicone lined baking sheet and bake about 9 - 10 minutes or until nicely browned. Cool and serve with endive leaves, grapes and other cheeses, etc. as a very interesting appetizer.
