Smoked Tuna Tacos

Fropm Dorothy McNett's recipes at A version of the famous smoked fish tacos from Cayucos / San Luis Obispo area.

1 - 2 albacore tuna steaks
sprinklings of raw sugar, paprika, sea salt and pepper
flour tortillas, lightly pan grilled
fresh tomato slices
shredded carrot
diced celery pieces
diced apple pieces
romaine leaves, finely torn into small pieces
drizzles of salsa roja (see recipe)

Season the tuna with sprinkles of sugar, paprika, salt and pepper. Use the Camerons stove top smoker to cook and smoke the tuna, or use one of the smoker bags. Or smoke the tuna in your out-door barbeque, etc.....or even purchase some ready cooked and smoked tuna if necessary. When ready to make the tacos, slice the tuna into small pieces.
In a skillet over medium high heat, heat the flour tortillas one at a time just to warm and very slightly toast them. Fold them in half and tuck in the smoked fish. Top with tomato slices, shredded carrot, diced celery and apple pieces. Top with romaine. Serve drizzled with salsa roja, or other sauces as desired.
