Camotes (candied sweet potatoes or yams)

2 - 3 sweet potatoes or yams
1/4 cup unsalted butter, perhaps more
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
1/4 cup raw sugar
drizzles of honey for serving

Scrub the potatoes or yams but do not peel. Place on a glass or ceramic plate and cook in microwave using 2 - 3 minutes per potato as a guide depending on the size They should start to soften but not be thoroughly cooked. Allow to cool a few minutes and with a nice sharp knife cut each one into round 1/2 inch thick slices. Heat a large heavy bottomed skillet on burner and add the butter, cinnamon, salt and sugar to make a syrup. Place the potatoes in the pan and cook over medium - medium high heat to finish the cooking and to "toast" the slices a bit. Arrange on a platter and drizzle with a bit of honey. Serve as a vegetable side dish, or even as an appetizer.
