Place on a glass or ceramic plate and cook in microwave using 2 - 3 minutes per potato as a guide depending on the size They should start to soften but not be thoroughly cooked. Allow to cool a few minutes and with a nice sharp knife cut each one into round 1/2 inch thick slices. Heat a large heavy bottomed skillet on burner and add the butter, cinnamon, salt and sugar to make a syrup. Place the potatoes in the pan and cook over medium - medium high heat to finish the cooking and to "toast" the slices a bit. Arrange on a platter and drizzle with a bit of honey. Serve as a vegetable side dish, or even as an appetizer. Recipe created 2016-07-25. © 1996-2013 Dorothy McNett. All Rights Reserved. |
