Apple and Sauerkraut Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. You do not need to "make" your own sauerkraut anymore, just purchase a package of ready to use raw sauerkraut, available in most grocery stores. You can adjust the amounts of sugar, salt and pepper in this salad to get the taste just right!

about 4 cups sauerkraut, drained
1 carrot, shredded
1 - 2 apples, shredded
1 medium onion, shredded
2 - 3 green onions, finely snipped
2 tablespoons extra virgin olive oil
2 teaspoons raw sugar
1 teaspoon fresh oregano, finely snipped
salt and pepper, as desired (depends on the sauerkraut, etc....)

Combine the drained sauerkraut with the shredded carrot, apples, onion and snipped green onions in a salad bowl. In a glass measuring cup whisk together the olive oil, sugar, oregano and salt and pepper. Pour into the salad, toss and serve. Or, chill several hours or even overnight.
