Grainy Bread Thins

From Dorothy McNett's recipes at www.dorothymcnett.com. Great for appetizer "crackers" or to serve with soups and salads, etc. Easy to make!

1 cup whole wheat flour
1/4 teaspoon sea salt
1/2 teaspoon baking powder
1/4 teaspoon paprika (sweet or smoked)
1/4 teaspoon freshly ground pepper
1/4 cup cold butter
2 tablespoons blue cheese (or use tomato paste)
1/4 cup very cold water

flour for rolling out the dough
extra virgin olive oil for brushing
granola for sprinkling, if desired

Preheat oven to 400 degrees. In food processor with steel chopping blade in place, whirl the flour, salt, baking powder, paprika and pepper. Add the cold butter and blue cheese and process just to cut the butter into small pieces. Add the water and process until it wants to form a ball. Sprinkle some flour over a pastry cloth or work surface. Using a floured rolling pin, roll out the dough to about 1/4 inch thick. Cut into desired shapes, using a pastry cutter or cookie cutters, or simply using a knife. Place them on baking sheets and with a fork pierce the top surfaces. Brush each with olive oil and sprinkle liberally with granola. Bake 8 - 10 minutes or until nicely browned.
