Shrimp Remoulade Salad

From Dorothy McNett's recipes at In New Orleans, Shrimp Remoulade has been one of the all-time favorites. Here it is presented as a delicious salad.

3-4 green onions
1 rib of celery
2 cloves of garlic
3 - 4 tablespoons chopped fresh parsley
1/4 cup hot creole style mustard (or use Dijon with 2 teaspoons creamed horseradish)
2 tablespoons paprika
1/8 teaspoon sea salt
1/8 teaspoon freshly ground pepper
1/3 cup white vinegar
2/3 cup extra virgin olive oil

freshly cooked prawns or shrimp, or 1 - 2 cups baby shrimp
crispy lettuce

Very finely dice the onions, celery, garlic and parsley, or use a food processor and whirl them to make a paste. Add the mustard, paprika, salt and pepper. Blend in the vinegar and olive oil. Arrange the cooked prawns or shrimp on a nice bed of crispy salad greens and pour the dressing over. Serve!
