Bavarian Cheesecake

From Dorothy McNett's recipes at Cheesecake with apples and filberts! YUM!

1/3 cup raw sugar
1/2 cup softened but not melted unsalted butter
1/2 teaspoon vanilla or vanilla bean paste
1 cup unbleached all purpose flour
1 pkg. (8 oz) cream cheese, softened
1/4 cup raw sugar
1 egg
1/2 teaspoon vanilla or vanilla bean paste
1 - 2 apples, sliced (2 cups)
1/4 cup raw sugar
1 teaspoon cinnamon
1/3 cup coarsely chopped filberts, hazelnuts or walnuts

Preheat oven to 375 degrees. In a bowl combine 1/3 cup sugar, butter and vanilla to blend and get a bit creamy. Blend in flour. Spread on bottom and up the sides a bit in a 9 inch springform pan, pressing it in place with your hands. Set aside. In a bowl combine the softened cream cheese, 1/4 cup sugar, egg and vanilla and mix well. Spread evenly over the crust. In a bowl combine the sliced apples, 1/4 cup sugar and the cinnamon. Spoon over the cream cheese and sprinkle with the nuts. Bake 45 - 50 minutes. Turn off oven and leave the door ajar and let the cheesecake cool for about 1 hour. Remove from the springform pan and serve warm, or chill completely.
