Cheesecake Candy Truffles

From Dorothy McNett's recipes at Yes, a little rich and decadant but everyone always loves these and wants the recipe! Great for gift giving also!

1 package of cream cheese (8 oz.) softened
1/2 cup creamy peanut butter
3 cups extra dark chocolate chips
1/2 cup salted roasted peanuts, coarsely chopped (or use other nuts, seeds, etc.)

Soften the cream cheese at room temperature, or put it into a glass or ceramic batter bowl and soften in microwave for 1 minute on half power, or until soft enough to blend, adding 30 - 40 seconds more if needed. Blend in peanut butter. Scoop into balls and place on parchment lined baking sheet, set aside to cool. Put the chocolate chips in glass measuring cup or bowl. Melt in microwave 1 minute, stir, add another 30 - 45 seconds as needed to melt but do not overheat. Dip each truffle into the chocolate and place on the baking sheet. Sorinkle with chopped peanuts or other nuts and or seeds, as desired. I like to use hemp seeds or sesame seeds along with the peanuts.
