Sage and Pumpkin Sauce or Gravy
From Dorothy McNett's recipes at www.dorothymcnett.com. Serve this with grilled steak along with lots of fresh greens for a magnificent fall main dish!
1 -2 shallots, minced
Finely mince the shallots and garlic and tear or chop the sage leaves. In heavy bottomed skillet, heat the oil and saute the onions, garlic and sage 2 - 3 minutes. Add the pumpkin and milk and bring to a boil, reduce heat and stir in the cheese,salt and pepper. Serve as a sauce with grilled meats, etc. with lots of fresh greens on the side.
