Sage and Pumpkin Sauce or Gravy

From Dorothy McNett's recipes at Serve this with grilled steak along with lots of fresh greens for a magnificent fall main dish!

1 -2 shallots, minced
2 - 3 cloves garlic, minced
6 - 8 large fresh sage leaved, chopped
1 tablespoon extra virgin olive oil
1/2 - 3/4 cup pumpkin puree (freshly made or canned)
1/3 cup milk
2 oz. goat cheese, creamy not crumbly
1/4 - 1/2 teaspon fine sea salt
1/4 teaspon freshly ground pepper
fresh baby greens, etc. for side garnish

Finely mince the shallots and garlic and tear or chop the sage leaves. In heavy bottomed skillet, heat the oil and saute the onions, garlic and sage 2 - 3 minutes. Add the pumpkin and milk and bring to a boil, reduce heat and stir in the cheese,salt and pepper. Serve as a sauce with grilled meats, etc. with lots of fresh greens on the side.
