Oatmeal Cheese Appetizer Bits

From Dorothy McNett's recipes at www.dorothymcnett.com. Instead of a "cracker" made with flour, this is made with oatmeal. Add dried herbs and other flavorings if you desire. Easy and so pleasing!

2 cups uncooked oatmeal
1/2 teaspoon semi-coarse sea salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon baking powder
2 tablespoons sesame seeds (or hemp seeds, etc.)
2 tablespoons extra virgin olive oil
1/4 cup sherry, white wine, or water
1/2 - 1 cup soft cheese, such as ricotta or softened cream cheese
assorted cheeses as desired, (cheddars, swiss, etc.) cut into small pieces
assorted dried fruits and nuts
dark chocolate chips

Preheat oven to 350 degrees. In food processor with steel chopping blade in place, whirl the oatmeat, salt, pepper and baking powder to chop up the oatmeal a bit. Add sesame seeds. olive oil and sherry. Blend until it becomes a nice soft smooth ball, perhaps adding a bit more liquid if necessary. Line a baking sheet with a silicone mat or parchment paper. Spread or roll the dough and cut into interesting shapes like crackers, sprinkling on a bit more oatmeal if the dough is too sticky to work with. Bake 15 - 20 minutes or until done and lightly browned. (It depends on how thin or thick they are) Cool completely. To serve, spread with the soft cheese such as ricotta or cream cheese, etc. Arrange on a platter and sprinkle with some dried fruits and nuts. Serve with cut up assorted cheese slices and some dark chocolate chips, if desired. Make it fun and attractive and "appetizing"!
