Crab Boats

From Dorothy McNett's recipes at Sit by Monterey Bay and watch the crab boats harvesting the fresh Dungeness crab and then make and eat some of these "crab boats".

about 1 pound fresh cooked crab, chopped
zest and juice of 1 fresh lemon
2 - 3 tablespoons chopped fresh parsley
2 - 3 tablespoon thinly snipped fresh chives or green onions
1 - 2 tablespoons fresh basil, chopped
1/3 - 1/2 cup mayonnaise (Ojai Cooks is great!)
1/4 teaspoon fine sea salt
freshly ground pepper
fresh local endive leaves, or other lettuce leaves
radish "roses" or baby tomatoes, etc.

Combine crab, zest and juice of lemon, parsley, chives, and basil. Blend in mayonnasie, salt and pepper. Fill individuial endive leaves with the mixture and arrange on a beautiful platter and garnish with radish roses or baby tomatoes, etc.
