Use any jam that you may have on hand, but the Blueberry Jam in a Flash is one of my favorite ways to serve any dessert, etc. Combine with fresh berries of the season and away you go with another great dessert show! 2 eggs Preheat oven to 325 degrees. Lightly oil or butter a 9 by 13 inch baking dish and set aside. In batter bowl whisk the eggs well and then whisk in the sugar and oil or soft butter. Add the chopped dates and walnuts. In a bowl whisk together the flour, salt, and baking powder. Blend it into the .batter along with the vanilla. Spread into the prepared baking dish and bake 35 - 45 minutes until nicely browned and it tests done. Set aside on a cooling rack, and when cool cut into serving sized pieces. Arrange on dessert plates and garnish with fresh blueberries and dollops of the blueberry jam. This is also nice with ice cream or whipped cream, as desired.
