Cheese Puff Appetizers

From Dorothy McNett's recipes at www.dorothymcnett.com. Use these as a great appetizer, or serve along side a nice green salad.

1 cup grated sharp cheddar, or Monterey Jack, etc.
1/4 cup unsalted butter, softened
2-3 dashes of tabasco sauce
1/4 teaspoon baking powder
1/4 teaspoon sea salt
1/2 cup unbleached all purpose flour
12 small stuffed olives
12 small pearl onions

In batter bowl blend grated cheese, soft butter, and tabasco sauce. In a small bowl whisk together the baking powder, salt and flour. Add to the cheese mixture and hand knead dough for about a minute. Wrap a small amount of the dough around an olive and around an onion and place on a plate. When all are wrapped, refrigerate about 10 - 15 minutes or longer. Preheat oven to 400 degrees. Place the balls on a baking sheet and bake 10 - 14 minutes or until nicely browned. Set aside to cool down a bit and then serve warm or at room temperature.
