Parsnips Roasted Deluxe

From Dorothy McNett's recipes at I cll these deluxe parsnips due to the roastiung with extra virginn olive oil and the fresh rosemary!

1 pound or so of parsnips
2 tablespoons extra virginn olive oil
2 - 3 tablespoons freshly snipped rosemary
sprinkles of sea salt
grindings of pepper

Preheat oven to 425 degrees. Wash and trim parnsips, peeling as necessary. Cut them into long pieces and place on a baking sheet with sides. Drizzle with the olive oil, sprinkle with the snipped rosemary, salt and pepper. Place in oven, reduce heat to 375 degrees and roast for about 30 - 40 minutes, until tender and nicely roasted and smelling wonderful. Serve as is, or use as an addition to a salad, etc.
