I cll these deluxe parsnips due to the roastiung with extra virginn olive oil and the fresh rosemary! 1 pound or so of parsnips Preheat oven to 425 degrees. Wash and trim parnsips, peeling as necessary. Cut them into long pieces and place on a baking sheet with sides. Drizzle with the olive oil, sprinkle with the snipped rosemary, salt and pepper. Place in oven, reduce heat to 375 degrees and roast for about 30 - 40 minutes, until tender and nicely roasted and smelling wonderful.
