Irish Boxty (potato pancakes)

2 pounds potatoes
1/2 teaspoon sea salt (Irish Celtic...)
1/2 teaspoon freshly ground pepper
1/3 cup all purpose unbleached flour
1/4 cup milk or half and half
1 egg, whisked
1 cup shredded corned beef
3 - 4 tablespoons unsalted butter or olive oil, for frying

Wash and scrub the potatoes, peeling if desired or not. Cut half of them into small about 1 inch pieces and plae in a glass or ceramic batter bowl. Cover with a glass lid or use a large kale leaf. Cook in microwave 4 - 5 minutes or until the chunks of potato are tender when pierced with a fork. Using a potato masher or fork, mash the cooked potatoes to make them smooth. In meantime, shread the remaining potatoes and add them uncooked, to the cooked ones. Stir in the salt, pepper, flour, milk, egg, and shredded corned beef. In heavy bottomed large skillet, heat the butter or oil. Shape the mixture into about 1/3 cup sized patties. Fry about 3 - 4 minutes per side, until nicely browned. Place on serving platter and continue to cook the rest and then serve!
