Cucumber Salad (as tasted while in Ireland)

From Dorothy McNett's recipes at www.dorothymcnett.com. Quick, easy, very tasty, and also nice and green!

2 medium cucumbers
1 medium onion
1 - 2 tablespoons fresh dill, finely chopped
1/4 cup vinegar
2 tablespoons raw sugar
1/2 teaspoon sea salt
freshly ground pepper
2 tablespoons extra virgin olive oil
lots of dark green spinach or other greens, for serving

Scrub but do not peel the cucumbers. Finely slice them into rounds. Finely dice the onion. In salad bowl combine the sliced cucumbers, diced onion, chopped dill, vinegar, sugar, salt, pepper and oil. If time allows, refrigerate 1 - 2 hors before serving but it is delicious served right now. Scatter the greens over serving plates and arrange the cucumber mixture over them. Or, simply toss everything together and serve.
