Veggie Burgers with BBQ Sauce

1 medium sized beet
1/2 onion, minced
3-4 garlic cloves
1/2 cup chopped parsley
1 medium turnip, minced
1 - 2 stalks celery
1 cup oatmeal
1 cup bread crumbs
2 eggs
1/2 teaspoon sea salt
freshly ground pepper
1/2 cup barbeque sauce, or catsup

Wash and peel the beet, using a vegetable peeler. Place in a bowl and cook in microwave for 3 - 4 minutes. Allow to cool. Mince all veggies in a chopper or food processor. In batter bowl, combine with all remaining ingredients.
Form into patties (mixture will be soft). You may need to add a bit more oatmeal if it is too "runny". Place in oiled skillet and cook with medium heat until patties are fairly firm. Serve as patties on a plate, or serve in hamburger buns. This mixture can also be stir-fried so that it is crumbly and then served over rice or noodles along with a nice sauce.
