Olivada (Kalamata olive spread or dip)

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve with pita bread, etc. as an appetizer, or use as a vegetable dip.

2 - 4 cloves garlic
3 cups pitted Greek kalamata olives, drained
1/3 to 1/2 cup extra virgin olive oil

In processor with steel chopping blade in place and the motor running,drop in the garlic to mince to make a paste. Add the olives and pulse to chop very finely. With motor running pour in the olive oil and blend.
