Spargel Tureen (Asparagus Bake)

From Dorothy McNett's recipes at If you can get some fresh white asparagus, use it. However, here in California we usually have green asparagus. In Bavaria in the springtime, white asparagus is the big hit!

1/4 cup unsalted butter
12 - 15 spears of asparagus, washed and trimmed
2 - 3 tablespoons fresh thyme, snipped
3/4 cup creme fraiche
1 tablespoon German style mustard, or Dijon mustard
sprinkles of sea salt and freshly ground pepper
1 cup bread crumbs
1/3 cup freshly grated cheese, such as parmesan, etc.
2 - 3 tablespoons freshly snipped parsley

Preheat oven to 425 degrees. Melt the butter and pour into a gratin dish or baking dish, casserole, etc. Slice the asparagus lengthwise into strips and arrange in the buttered baking dish. Sprinkle with the snipped fresh thyme. In a glass measuring cup or bowl combine the creme fraiche and the mustard and heat in microwave 1 - 2 minutes. Or heat in a small saucepan but do not let it boil, just get it nice and hot. Stir it well, and then drizzle over the asparagus. In a bowl combine the salt, pepper, bread crumbs, and grated cheese. Scatter it over the top and snip on some of the parsley. Bake about 15 - 20 minutes, or until top is golden brown and sauce is a bit bubbly on the edges, etc. Remove from oven, allow to stand about 5 - 10 minutes and then sprinkle with more parsley and serve.
