Pavlova Cake (a nice meringue cake!)

4 egg whites
1 1/4 cups raw sugar
1 teaspoon white vinegar
1 teaspoon vanilla extract or vanilla bean paste
1 tablespoon cornstarch

1 cup heavy whipping cream (or use creme fraiche, mascarpone cheese...)
1 teaspoon raw sugar or honey
fresh fruits of the season, such as raspberries, strawberries....

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Draw a 10 inch circle or an Easter egg shape on the paper. Set aside. Using an electric mixer, beat the egg whites until soft peaks form. Very gradually add the sugar and beat at high speed until thick and glossy with nice high peaks. Mix vinegar, vanilla and cornstarch together and carefuily add to the meringue. Beat on high speed for 2 minutes more. Spread the egg mixture to within 1 inch of the edge of the drawn circle, keeping the shape as even as possible. Smooth top surface over. Place in preheated oven and then turn oven temperature down to 200 degrees and bake for 1 hour. Turn oven off. Open door slightly and leave pavlova in oven until cold. Now carefully lift it onto a serving plate. Whip the cream until stiff, adding the sugar or honey. Or whip up the creme fraiche or mascarpone to make it smoother and lighter, adding the sugar or honey. Slice the berries and arrange on top of the cream.
