Filet Mignon ala Paris

From Dorothy McNett's recipes at www.dorothymcnett.com. Make a beautiful presentation with special sauces and greens, sort of like painting an artistic picture! And of course, good quality mayonnaise is always great. Also lots of fresh herbs and spinach, etc.

2 - 4 filet mignon steaks
1 tablespoon extra virgin olive oil
sprinkles of pepper, as desired
sprinkles of fine sea salt
snipped fresh basil leaves
about 2 tablespoons grapeseed oil

Mayonnaise, or Saffron Butter Sauce, other sauces as desired
baby spinach, other greens, etc......

Brush the steaks with the olive oil and then sprinkle with the pepper, salt and basil, patting it into the steaks as much as possible. Place a heavy bottomed saute pan over high heat until very hot. Add the grapeseed oil and then the steaks. Sear for about 3 - 4 minutes, reducing the heat as necessary. Turn meat over, and continue to sear on the other side,until cooked to your liking. Remove to serving plates and garnish with homemade mayonnaise or other sauces and baby spinach as desired.
