Guatemalan Pineapple Salsa

From Dorothy McNett's recipes at www.dorothymcnett.com. Rum is used in a lot of Guatemalan foods and it makes a very interesting salsa to say the least!

3 cups pineapple cut into 1 inch cubes
1/2 red onion or 2 shallots
1 jalapeno pepper
2 - 3 cloves garlic
2 tablespoons extra virgin olive oil
1/4 cup water (or use rum if desired!)
1/2 teaspon sea salt
1 - 2 teaspoons freshly ground black pepper, or less as desired

Use a blender or a food processor. Cut everything into chunks and then process with all of the ingredients until smooth. Serve with corn chips and / or tacos, etc. It also is used often as a drizzling sauce over grilled meats, chicken, fish, etc.
