Black Bean and Mango Salad

From Dorothy McNett's recipes at

1 can black beans, drained and rinsed
1 red or green bell pepper, diced
4-6 green onions, sliced
1/4 cup fresh cilantro diced
1 avocado, cut into slices or chunks
2 cups or so of mango, diced
zest and 1/4 cup lime juice (or lemon or orange...)
1/4 cup extra virgin olive oil
1/2 teaspoon sea salt
freshly ground pepper

Use a can of good quality black beans, drained and rinsed, or cook some raw ones and let them cool. Place beans, bell pepper, green onions, cilantro, avocado and mango into a beautiful salad bowl. In a glass measuring cup whisk together thie zest and juice of the lime with olive oil, salt and pepper. Pour over the salad, toss and serve.
