2 tablespoons extra virgin olive oil
In heavy bottomed skillet heat the oil. Finely chop the shallots or onions and add to the hot oil and cook and stir over medium heat about 10 minutes to soften and to just begin the browning a bit. Add the vinegar, sugar and salt and cook and stir until it thickens into a jam consistency. Cool and serve over just about anything!
