Ssam (Korean Lettuce Wraps)

1 cup short grain white rice (sushi rice, etc.)
1 1/2 cups water
1/4 teaspoon fine sea salt
1 - 2 tablespoons toasted sesame seeds, for serving
1 - 2 heads tender leaf lettuce,for serving

4 oz. firm tofu
2 tablespoons sesame oil
4 oz. lean ground beef
1 green onion, finely minced
1 - 2 cloves garlic, finely minced
1/3 cup bean paste
dash of freshly ground pepper
1/4 teaspoon cayenne
1 tablespoon soy sauce
1 tablespoon raw sugar

For the rice: Combine the rice, water and salt in a glass or ceramic batter bowl. Cover with a glass or ceramic plate or lid. Cook in microwave on full power for 5 minutes, and then on half power (power level 5) for 10 - 12 minutes or until rice is tender and done. Set aside. For the Toasted Sesame Seeds, place sesame seeds in a dry skillet and heat over medium high heat, stirring constantly, until they become brown and start to pop. Remove from the pan and set aside for serving time.
Drain the tofu and pat dry, set aside. Heat a heavy bottomed fry pan over medium heat and add the sesame oil and and then stir in the ground beef, minced onion, and garlic to brown the meat and then stir in the bean paste, pepper, cayenne, soy sauce and sugar. Crumble up the tofu and add to the pan, and cook over mediium heat several minutes. It should be thickened enough to be a bit like a "paste". Place in a serving bowl and sprinkle on the toasted sesame seeds. On a flat platter arrange the lettuce leaves, cooked rice and the bowl of meat mixture. To eat, place a spoonful of rice and some meat on a leaf and roll it up!
