African Berbere Sauce

From Dorothy McNett's recipes at Much like any barbeque sauce or other spicy sauce used with meats, sandwiches, and more!

1 clove garlic
1 green onion
1/4 teaspoon ground ginger
1/4 teaspoon ground cardamom
1/4 teaspoon ground coriander
1/4 teaspoon fenugreek seeds
1/4 teaspoon ground nutmeg
pinches of ground cinnamon, cloves and allspice
1 teaspoon sea salt
1 tablespoon red wine, or apple or pomegranate juice
1/2 cup paprika
1 teaspoon ground hot red pepper
1/3 cup water
1 tablespoon extra virgin olive oil

In food processor or blender first grate finely the garlic and onion and then add the remaining ingredients and blend to make a thick smooth mixture. Transfer to a skillet and heat over medium heat, stirring constantly, for about 3 minute or so, being careful not to let it burn on the bottom. Transfer to a bowl and drizzle on a few more drops of olive oil. It is ready to use right now, and refrigerate any unused amounts to use within a week or so.
