Dragon Tongue Beans and Sausage

From Dorothy McNett's recipes at www.dorothymcnett.com. Dragon Tongue beans are another type of fresh beans, such as green beans, etc. They have a great dragon tongue look!

about 12 - 14 fresh dragon tongue beans, or other green beans
2 tablespoons water
3 - 4 Polish sausages
1 tablespoon extra virgin olive oil
2 - 4 cloves garlic, sliced
1 bunch of fresh kale (2 - 3 cups torn into smaller pieces)
1/3 cup red wine
1/3 cup water
pinch of dried red pepper, as desired

Wash and trim the beans, removing the stem end but leaving the tail end on. In a heavy bottomed skillet with a lid, heat the 2 tablespoons water and add the beans. Cover and cook 2 minutes. Remove beans to a plate. Reheat the skillet with the olive oil and add the sausages and garlic and cook to brown slightly. Remove to the plate. To the hot pan add the kale, wine, water and a pinch of red pepper. Cook and stir to wilt the kale and then add the beans and sausages and heat thoroughly. Serve!
