Quick and Easy Beef with Vegetables

From Dorothy McNett's recipes at www.dorothymcnett.com. It is the seasonings and the beef and the veggies that make this a wonderful main dish to serve just as it is, or add some broth and make it into a soup, or chill it and serve it over tossed greens for a salad.......eat and enjoy!!

1 pound beef flank steak or other tender cut steak...
1 teaspoon extra virgin olive oil
1/2 teaspoon dried herbs, such as herbs d' Provence
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1 small onion or shallot
3 - 4 cloves garlic
a variety of fresh vegetables, such as carrots, broccoli, fennel, peppers, zucchini...
2 - 3 tablespons grapeseed oil
1 - 2 fresh local tomatoes, sliced or diced
2 -3 tablespoons sauce or marinade (pasta sauce, Teriyaki sauce, barbeque sauce...clean out the refrigerator!)

Slice the beef into strips, cutting across the grain as much as possible. Place in a dish and toss in the 1 teaspoon olive oil, the herbs, cumin, paprika,salt and pepper. Set aside while you slice the vegetables into strips or chunks, using as many varieties as possible. In a wok or stir fry pan, or other heavy bottomed frying pan, heat the grapeseed oil until nice and hot and add the seasoned beef strips. Cook, stirring often, for several minutes. Stir in the sliced onion, slivered garlic and the sliced vegetables (not the tomatoes) and cook and stir several minutes. Now stir in the tomatoes. Add your choice of sauce and heat and serve.
