Peach Cobbler

From Dorothy McNett's recipes at Fresh peaches baked in a cake-like batter, perfect for summer!!

1/2 cup unsalted butter
1 cup all purpose unbleached flour
2 cups raw sugar (divided)
1 tablespoon baking powder
1/4 teaspoon sea salt
1 cup milk or half and half (or use hemp milk or almond milk)
4 - 4 1/2 cups fresh peach slices
zest and juice of 1 lemon
cinnamon or nutmeg, or both

Preheat oven to 375 degrees. Melt the butter in microwave 30 - 45 seconds and then pour it into a 9 by 13 inch baking pan. In batter bowl combine the flour with 1 cup of the sugar along with the baking powder and salt. Whisk in the milk and pour batter over the melted butter but do not stir it. Combine the peach slices with the remaining 1 cup of sugar, the zest and the lemon juice and pour over the batter but do not stir. Sprinkle on some cinnamon or nutmeg. Bake 40 - 45 minutes or until nicely browned. Allow to cool slightly and serve warm or room temperature.
