Peach Coulis

From Dorothy McNett's recipes at www.dorothymcnett.com. Use over fresh pies, cakes, other desserts, etc.

2 -3 fresh peaches or nectariens, or a mix
1/4 cup powdered sugar
1/4 teaspoon fine sea salt
1/4 cup sweet wine or apple juice, or sherry or rum........

Wash and pit the peaches but do not peel them. Chop them finely, mashing as you go. (Or use the food processor!) Add sugar, salt and wine or juice. Taste to get it just right and then use as a topping for freshly baked cakes, pies and other desserts....enjoy the fresh fruits of the season!
