Kona Coconut and Coffee Candies

From Dorothy McNett's recipes at www.dorothymcnett.com. A combination of popular tastes to make a super sweet addition to any dessert or just to serve alone!

1/2 cup unsalted butter
2 cups powdered sugar
1/4 teaspoon fine sea salt
3 cups flaked coconut
1/2 cup dark chocolate chips
1 - 2 tablespoons very finely ground Kona coffee beans

In glass batter bowl, melt the butter in microwave for 30 - 45 seconds. Blend in sugar, salt and coconut. Shape into 1 inch balls and place on a parchment lined plate or baking sheet. Press each down in the center to form a small dent. In glass measuring cup melt the chocolate 30 seconds in microwave, adding another 30 seconds or more to melt completly. Stir in finely ground coffee beans. Dollop a bit into the openings of the candies. Set aside about 30 minutes or more to firm up.
