Queijadas de Leite (Portuguese Cupcakes)

Preheat oven to 350 degrees. Butter or oil a cupcake pan or pans (12 cups) and sprinkle with just a bit of flour and set aside. You want to get the eggs really beaten up nicely so it is best to use an electric beater. Beat them several minutes to make them light and airy and then gradually beat in the sugar, melted butter and the citrus zest. Gradually add the warmed milk while beating, and then beat in the flour and salt just to mix nicely but do not overbeat. Scoop the mixture into the prepared pan. Bake 35 - 45 minutes or more until nicely browned. Place pan on a cooling rack for about 15 minutes or more before serving.
