Fried Cabbage with Chourico
From Dorothy McNett's recipes at www.dorothymcnett.com. A popular vegetable side dish or even a main dish found often along the Portugal and Spain border areas. Chorizo or Chourico...it depends on where you are.
1 pound chourico or chorizo, beef or pork or a combinatioon
Cut the sausage into small pieces or dice it up, removing the casings if present. Heat a heavy bottomed deep frypan or saute pan, adding the olive oil and saute the chorizo several minutes. Add the chopped onion and diced cabbage and cook and stir several minutes. Turn heat down to low, cover, and cook about 10 - 15 minutes. Taste and if necessary add a bit of salt and pepper. It all depends on the chourico/chorizo and your taste buds! Serve hot.
