T-Bone Steak with Herb Peppermint Sauce

From Dorothy bMcNett's recipes at www.dorothymcnett.com. Use any steak or chops desired, but this is especially great with nice thick (about 1 1/2 inches) T-Bones.

2 cloves garlic
2 cups packed fresh parsley leaves
1 - 2 chili peppers, as desired
1 teaspoon dried oregano
2 -3 tablespons snipped fresh peppermint, and more for garnish
3/4 cup extra virgin olive oil
1/4 teaspoon sea salt

2 T-Bone steaks, about 1 1/2 inches thick, or other meats or steaks as desired
sprinkles of sea salt and freshly ground pepper
grapeseed oil or other oil, for brushing the steaks

In food processor with steel choping blade in place whirl thie garlic to puree it nicely and then add the parsley, peppers, oregano and peppermint leaves to finely mince. With motor running add the olive oil and salt, Scrape into a nice serving cup or bowl and set aside. Sprinkle the steaks with salt and pepper. Heat a heavy bottomed saute pan or grill pan and when nice and hot sprinkle steaks with a bit of oil and then put them into the pan and cook over high heat until nicely charred, about 3 - 4 minutes. Turn and cook another 2 - 4 minutes depending on how you like them cooked, regulating the heat so that they are cooking nicely but not smoking and burning. Serve with the pepper sauce on the side.
