Rice Cooked in Seafood Stock

From Dorothy McNett's recipes at www.dorothymcnett.com. Or use any kind of stock as desired......

1 cup white rice (long grain or short grain, or a mix)
2 cups seafood stock
1 teaspoon extra virgin olive oil
pinches of sea salt and freshly ground pepper, as needed (depends on the stock!)

Combine all ingredients in a glass or ceramic batter bowl. Cover with a glass or ceramic plate or lid. (no plastic!) Cook in microwave 5 minutes, and then cook 12 - 15 minutes on half power (power level 5) until rice is cooked nicely. Adjust the seasonings as desired.
