Fish Tinola (Soup)

From Dorothy McNett's recipes at www.dorothymcnett.com. Tinola is a soup based dish served as an appetizer or main dish in the Philippines.

5 cups water
1 pound fresh fish (any variety such as cod, salmon, rock fish, etc....)
small knob of ginger root, peeled and diced
1 - 2 fresh tomatoes
2 medium sized green bell peppers
3 - 4 green onions
1 teaspoon sea salt
1/2 - 1 teaspoon freshly ground pepper

In saucepan bring the water to a boil. Cut the fish into small pieces. Chop and dice the ginger, tomatoes, peppers and green onions. Add everything to the boiling water, reduce to a simmer, and cook about 10 minutes or more, as desired. If cooking for a longer time, start with the vegetables only and then add the fish later.
