Pumpkin Cookies

From Dorothy McNett's recipes at www.dorothymcnett.com. Just another sugar cookie recipe but very tasty with the additionn of pumpkin pulp!

1/2 cup unsalted butter
1/2 cup extra virgin olive oil
1/2 cup pumpkin pulp (freshly made or canned)
2 eggs
1 1/4 cups raw sugar
1 teaspoon vanilla extract or vanilla bean paste
4 cups unbleached all purpose flour
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1/2 teaspoon sea salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves

Preheat oven to 350 degrees. Line a baking sheet (or two) with silicone liner or parchment paper. In batter bowl, combine the softened butter, olive oil, pumpkin pulp. eggs, sugar and vanilla. In another bowl whisk together the flour, soda, cream of tartar, salt, cinnamon, nutmeg and cloves and then fold into the batter. Scoop onto the baking sheet, using about 2 tablespoons of the dough each. Flatten each with the bottom of a glass, sprinkling with a little sugar or flour if needed. Bake 10 - 15 minutes. Allow to cool and serve!
