Baked Zucchini Cheese Strips

From Dorothy McNett's recipes at A great appetizer or a nice bread-like way to fix zucchini.

2 eggs
4 cups grated zucchini (about 2 - 3 medium sized)
2 - 4 cloves of garlic, diced
1/2 teaspoon dried oregano
3 cups shredded mozzarella (2 plus 1)
1/2 cup Parmesan cheese
1/4 cup cornstarch
1/4 - 1/2 teaspoon sea salt
freshly ground pepper, as desired
snipped fresh parsley for garnish
any sauces you may have to use for dipping into, or not

Preheat oven to 425 degrees. Grate the zucchini, using food processor or a nice grater. Grate the mozzarella and the Parmesan. Now in a batter bowl whisk the eggs and add the zucchini, garlic, oregano, 2 cups of the mozzarella, the Parmesan, cornstarch, salt and pepper. Spread into a baking sheet with sides, using a silicone mat or lightly spread it with some oil. Spread the mixture out to about 1/2 inch thickness. Bake 20 - 25 minutes and then sprinkle the top with the remaining 1 cup of mozzarella. Bake 8 - 10 minutes or until nicely browned. Let cool a bit and then sprinkle with snipped parsley and slice into strips. Serve as it is, or use with assorted sauces or salsa, etc for dipping.
