Baked Zucchini Cheese Strips
From Dorothy McNett's recipes at www.dorothymcnett.com. A great appetizer or a nice bread-like way to fix zucchini.
Preheat oven to 425 degrees. Grate the zucchini, using food processor or a nice grater. Grate the mozzarella and the Parmesan. Now in a batter bowl whisk the eggs and add the zucchini, garlic, oregano, 2 cups of the mozzarella, the Parmesan, cornstarch, salt and pepper. Spread into a baking sheet with sides, using a silicone mat or lightly spread it with some oil. Spread the mixture out to about 1/2 inch thickness. Bake 20 - 25 minutes and then sprinkle the top with the remaining 1 cup of mozzarella. Bake 8 - 10 minutes or until nicely browned. Let cool a bit and then sprinkle with snipped parsley and slice into strips. Serve as it is, or use with assorted sauces or salsa, etc for dipping.
