Pear Clafouti (up-side-down dessert!)

From DorothyMcNett's recipes at www.dorothymcnett.com. A wonderful fruit dessert using good nice ripe Bartlett pears of the fall and winter season.

2 - 3 ripe but firm bartlett pears
2 tablespoons unsalted butter, soft for spreading
1/4 cup raw sugar
3 tablespoons unbleached all purpose flour
1/4 teaspoon sea salt
4 eggs
2 egg yolks
2 cups warm milk or half and half
1 teaspoon vanilla extract or vanilla bean paste
1/4 cup dessert wine...sherry or port (pear brandy if available)

Preheat oven to 350 degrees. Brush the soft butter over the bottom of a 10 - 11 inch skillet (cast iron if available). Slice the pears, removing the core, seeds and any bruised spots. Arrange the slices over the butter in one layer, but slices can be overlapping. Set aside. In batter bowl whisk together the sugar, flour and salt. In another bowl whisk the eggs and yolks with the warm milk, vanilla and wine. With a spoon or spatula gradually stir in the flour mixture. Pour over the fruit. Bake 40 - 45 minutes or until nicely browned and set up. Place on a cooling rack and allow to cool to lukewarm and even to cool completely. When ready to serve, invert onto a beautiful serving platter, slice and serve.
