French Butter Lettuce Salad

From Dorothy McNett's recipes at A "traditional" French dressing,using catsup to give a nice red color.

1 shallot or small onion
1/3 cup raw sugar
1/3 cup catsup
1/4 cup white wine vinegar
1/3 - 1/2 cup extra virgin olive oil
1/2 teaspoon paprika
1/2 teaspoon sea salt

butter lettuce and/or other nice fresh salad greens
endive leaves

In food processor with steel chopping blade in place, whirl the shallot to mince it finely and then add sugar, catsup, vinegar, oil, paprika and salt and blend to make a nice smooth dressing, adding more olive oil if needed. Tear the greens into serving sized pieces and place in a salad bowl along with the sliced radishes. Toss in the dressing and serve.
