Used as a breakfast food, a snack, an appetizer with sherry wine and cheese and also can be slathered with butter and honey, one of Gerorge's favorite ways to eat the pancakes! 2 cups cornmeal In a bowl combine cornmeal and salt. Stir in the boiling water and then set aside to cool. Divide into 8 round pattys, about 3 inches round. Heat a flat griddle pan or large skillet and slather liberally with butter. Fry the pattys over medium heat, turning to brown each side. (Takes about 5 - 6 minutes per side) Serve as desired, plain or with other goodies. Recipe created 2018-02-19. © 1996-2013 Dorothy McNett.
