From Dorothy McNett's recipes at www.dorothymcnett.com. These were served throughout the early colonies and even in the White House, especially with Abraham Lincoln. Used as a breakfast food, a snack, an appetizer with sherry wine and cheese and also can be slathered with butter and honey or jam for a dessert.
2 cups cornmeal
In a bowl combine cornmeal and salt. Stir in the boiling water and then set aside to cool. Divide into 8 round pattys, about 3 inches round. Heat a flat griddle pan or large skillet and slather liberally with butter. Fry the pattys over medium heat, turning to brown each side. (Takes about 5 - 6 minutes per side) Serve as desired, plain or with other goodies.
