Dundee Lamb Chops

From Dorothy McNett's recipes at www.dorothymcnett.com. Great served with mashed potatoes or a potato casserole on the side. How about Rumbledethumps!!!

4 lamb chops
1/4 cup unsalted butter
1/2 teaspoon ground ginger
1/2 teaspoon paprika
pinches of sea salt
freshly ground pepper
1/4 cup water
5 tablespoons vinegar
4 tablespoons fruit marmalade (orange, etc.....)
snipped chives and orange slices, for garnish when serving

Heat the butter in a heavy bottomed skillet and then brown the chops for several minutes. Sprinkle each with the ginger, paprika, salt and pepper. Add the water and vinegar. Top each chop with a generous tablespoon of marmalade. Cover, and cook over low heat for about 25 - 30 minutes. Serve with snipped chives and an orange slice on each.
