Scottish Eggs and Greens

From Dorothy McNett's recipes at An appetizer, a brunch or lunch maindish, or a salad as such. Mustard sauce can be served with so many things, such as fish, cheeses, eggs, sliced cooked meats and on and on! Be creative!

mustard sauce (see recipe)
fried or poached eggs
fresh greens

Make the mustard sauce and set aside. It can be served hot, warm or cold. Arrange fresh greens on individual plates. Fry the eggs and place over the greens and drizzle with the mustard sauce.
