Stir and Bake Cake

From Dorothy McNett's recipes at www.dorothymcnett.com. So easy, just stir in a pan and bake! There are so many versions of cakes and this is one of the easiest and very delicious one to make. Add nuts,seeds, dried fruits as desired.

1 1/2 cups all purpose unbleached flour
1 cup raw sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon fine sea salt
6 tablespoons extra virgin nolive oil
1 tablespoon vinegar
1 teaspoon vanilla extract or vanilla bean paste
1 cup cold water

Preheat oven to 350 degrees. Place all ingredients in a 2 or 3 quart cake baking pan. Mix thoroughly with a fork. Bake 25 - 30 minutes. If desired, just a soon as you remove the cake from the oven, put some chocolate mint wafers on the top and let it stand a few minutes to melt and then spread it out. Cool, cut, and serve.
