Green Pea and Mint Dip Appetizer or Dressing

From Dorothy McNett's recipes at www.dorothymcnett.com. Perfect anytime of the year but is especially great for St. Patrick's Day with the green! Enjoy!

4 cloves garlic
3 - 4 cups freshly shelled peas, or frozen green peas thawed out
6 - 8 nice fresh mint leaves
zest and juice of 1 small lemon
2 - 3 tablespons extra virgin olive oil
1/2 teaspoon fine sea salt
1/4 teaspoon cayenne pepper, or as desired
crackers, bread sticks, vegetable slices, chips, etc for dippers

In food procesor with steel chopping blade in place whirl the garlic to turn it nice and mushy. Add the peas and mint leaves and blend. Add the zest and juice of the lemon, olive oil, salt and cayenne and whirl to make it smooth, adding more oil if needed for your desired consistency. Place into beautiful serving bowl and surround with lots of dippers.
