Greek Kebabs.....Lamb or Chicken

From Dorothy McNett's recipes at www.dorothymcnett.com. Skewered chucks of lamb or chicken grilled to your perfection!

about 2 1/2 pounds boneless leg of lamb or chicken breasts
1/3 cup lemon juice plus the zest as well
3 tablespoons extra virgin olive oil
1 shallot or small onion, finely diced
3 - 4 cloves garlic, finely diced
1 teaspoon dried oregano
1 teaspoon fine sea salt
1/4 teaspoon freshly ground pepper
1 large onion, cut into chunks
2 green bell peppers, cut into 1 1/2 inch pieces

Cut the lamb or chicken into 1 1/2 inch cubes and place in a bowl. Toss in the zest and juice of the lemon, olive oil, finely diced shallot, garlic, oregano, salt and pepper. Cover and chill several hours or overnight, stirring several times. When ready to cook, thread the cubes of lamb or chicken on 8 skewers, along with the onion and green pepper chunks, alternating to make a nice presentation. Either cook outside on a medium-hot barbeque, or preheat a flat grill pan on a stove top burner. Place skewered kebabs on the grill and cook and turn, basting often with the marinade. Turn to brown both sides and cook to your desired doneness.
