Skewered chucks of lamb or chicken grilled to your perfection! about 2 1/2 pounds boneless leg of lamb or chicken breasts Cut the lamb or chicken into 1 1/2 inch cubes and place in a bowl. Toss in the zest and juice of the lemon, olive oil, finely diced shallot, garlic, oregano, salt and pepper. Cover and chill several hours or overnight, stirring several times. When ready to cook, thread the cubes of lamb or chicken on 8 skewers, along with the onion and green pepper chunks, alternating to make a nice presentation. Either cook outside on a medium-hot barbeque, or preheat a flat grill pan on a stove top burner. Place skewered kebabs on the grill and cook and turn, basting often with the marinade.
