Polynesian Mixed Veggies

From Dorothy McNett's recipes at www.dorothymcnett.com. A nice selection of flavors!

1 medium onion, chopped
1 green bell pepper, chopped
2 - 3 medium carrots, sliced
4-6 fresh mushrooms, sliced
2 tablespoons unsalted butter
1 can (8 oz.) pineapple chunks
1 can (8 oz,) sliced water chestnuts, drained
1/2 teaspoon powdered ginger
1/4 teaspoon curry powder
1/2 teaspoon dried basil, or several fresh leaves snipped
1 tablespoon raw sugar
1/2 teaspoon sea salt (Hawaiian pink would be great here!)

Slice and chop veggies. Heat the butter in a heavy bottomed skillet or saute pan and then add the vegetables. Cook over medium heat about 5 minutes, stirring often. Add the pineapple chunks along with the juice. Add the drained water chestnuts, ginger, curry powder, basil, sugar and salt. Bring to a boil, reduce to simmer and cook and stir several minutes to blend flavors and to cook the vegetables to your desired doneness. Serve!
